Vinification |
Cold maceration: 4 days at 11 ºC. Fermentation: 16 days, between 26 ºC and 28 ºC. Post-fermentation maceration: 8 days in contact. Malolactic fermentation: 100% natural. |
Ageing |
4 months in contact with oak. and 3 months in the bottle before the release for sale. |
