Sauternes is an area north of Bordeaux that gives its name to France's best sweet wine. Thanks to its particular microclimate and the presence of morning mist, Botrytis cinerea, a noble rot, develops on the grape clusters, thinning the skin of the berries and reducing the presence of water and favouring the formation of a concentrated juice. The grapes, due to this mould, are greyish and dehydrated but will give a full and rich must that, when aged in small barrels, will give a wine so velvety and smooth that it is unrivalled. Only a few chateaux manage to produce these mouldy wines, since only in certain areas is it possible to encourage the creation of this noble mould. Of all of them, the most important is undoubtedly Château D'Yquem, which boasts worldwide fame since it produces the Sauternes par excellence.
