||After a soft pressing takes place the macerazinoe in steel where the peels remain in contact with the juice for 15-20 days at a temperature of about 30 °C.
||Immediately afterwards the wine is put into 225 liter barriques (from Alliers, Tronçais and American oak) where it completes the malolactic fermentation by the end of the harvest year. No filtration is done before the bottling. Aging in 16 barriques, 10 bottles.
||Perfect with steak, mushrooms, roast lamb, dishes with black truffle.
