||White classic method sparkling wine brut
||40% Chardonnay, 60% Pinot Nero
||Altitude: 510-550 m. a.s.l. Exposure: East.
||End of August beginning of September. A soft pressing of the grapes and only the heart of the second pressing is used.
||The fermentation is in steel tanks at a temperature of 13-14 °C for 28 days. The wine remains in steel for some months with battonage once a week. In Spring, the wine then referments in the bottle and this last 60 days.
||The wine is then left to lie on its yeasts for 30 months, in accordance with the strict regulations. The bottles are kept horizontally in our underground cellars. Finally the bottles are placed on pupitres, and are all turned manually one by one, by hand, preparing the wine for the final “disgorge”.
||A pleasant aperitif, or throughout a meal.
