Origin	Pinot Noir from the most suitable areas, located in the towns of Montecalvo Versiggia, S.Maria Della Versa, Rocca De' Giorgi (Pavia).
Climate	Altitude: 250-400 m. a.s.l.
Soil composition	Clayey limestone.
Yield per hectare	6,000-7,000 kg/hectare.
Harvest	With boxes towards the end of August and early September.
Vinification	A soft pressing is carried out where only the first must is extracted. Static clarification follows. Fermentation at a controlled temperature of 18°C is started with the help of selected yeasts and takes place in stainless steel tanks.
Ageing	The bottling (tirage) takes place the following spring, and bottle ageing takes place for a minimum of 36 months. After disgorgement, the bottles remain in the cellar for at least another 6 months.
