Vinification |
The wine remains for one year in oak barrels, where the alcoholic and lactic fermentations will take place. Only the percentage of new oak changes according to this. Alcoholic fermentation lasts four to six weeks, followed by malolactic fermentation, often more capricious depending on the vintage. After a year in casks, the wines are put into tanks for six months for further ageing. |
