History |
Contessa Rosa represents the true spirit of Fontanafredda: dedicated to Countess Rosa Vercellana, "Bela Rusin", this sparkling wine produced from altitude cultivated grapes expresses the union of the aromatic freshness and complexity of the great Barolo wine. For this cuvée, it has decided to undertake a new path by studying an expedition liquor with Barolo 1967. |

Soil composition |
The ground consists of white clays interlaced by layers of sand and limestone marc. |
Vinification |
Vinification: Most of the grapes are collected in boxes of about 20 kilograms and are poured directly in press for a soft and delicate squeeze. A portion of the pinot black grapes is pressed and left in contact with the skins in thermoconditioned tanks at 10 ° C for 12-24 hours. At the end of the maceration, regular soft pressing takes place. The obtained must is placed in thermoconditioned tanks for static decantation. The musts ferment in low-temperature stainless steel tanks (18-20 ° C) and at the end of the fermentation the wine is kept in contact with fine leeks until spring. At this point the cuvée is realized by joining the wines from the two fermentations. |
Ageing |
In May, the wine faces a second fermentation, the one in the bottle, followed by a process of ripening on the yeasts, in the fresh, dark and protected cellars, in keeping with the strictest rules of the Classic Method Sparkling Wine. |
Pairing |
Great as an aperitif, but above all - for its unquestioned personality - it is an excellent way to accompany all the courses with class. |
