Soil composition	The Fondrèche plateau is made up of ancient alluvial deposits. The soil is very stony (rolled pebbles, flint and crystalline) and chalky from the surface with a sandy-clay texture.
Vinification	Traditional, 14 to 21 days vatting time with only a few small punchings of the cap in order to favour a slow and progressive extraction.
Ageing	12 months on the lees in tuns for the Grenache and in barrels for the Syrah and Mourvèdre.
Allergens	Contains sulphites
