Vinification |
From a selection of Sangiovese grapes harvested in mid-October, the carefully destemmed grapes are vinified in modern stainless steel tanks, with maceration on the skins for an average duration of 25 days at an average temperature of about 26°C. |
Ageing |
Once the alcoholic fermentation is complete, the wine undergoes malolactic fermentation in French oak barriques where it remains for about 20 months and is further aged for 6 months in the bottle. |
