||Grapes are manually harvested in boxes of 20 Kg; the grapes come from specific vineyard called «Antica Chiusina».
||Fermentation and maceration take place in stainless steel tanks for 15/20 days at controlled temperature (24°-28° C) with daily pumping and délestage; a the end of alcoholic fermentation, maceration period continues bringing the temperature at 29 °C.
||After the racking, wine is immediately transferred into french oak barrels, where malolactic fermentation will be carried out . The racking will proceed for 18 months followed by bottle ageing.
||Ideal with roasted red meats, roast game, stewed beef.
