Very aromatic and perfumed with floral and fruity scents of cardamom, melissa, rose, lime blossom, cherry blossom and sweet almond.

Flavour

Dry, generous, soft, and almost juicy, filling the mouth, showing good structure and a nice, fruity, aromatic finish.

Fish, grilled, pan-fried or in sauce, mullet, turbot, lobster, crab. It also pairs with cheeses like Comté, Reblochon, and Fourme d'Ambert, or with dishes flavoured with oriental and Indian spices.

Harvest The grapes are pressed in small tanks, without pumping or other mechanical intervention.
Fermentation temperature 18 - 24 °C
Vinification After pressing, the must is decanted for a few hours, then fermented in temperature-controlled barrels or vats between 18 and 24°C. The wine is racked just once, before natural clarification during the winter. The following spring, the wine is lightly filtered just before bottling, and the bottles are then aged in the company's cellars before being put on the market.
