Vinification	Manual harvesting in boxes, grape sorting and subsequent destemming. Alcoholic fermentation with medium-long maceration follows. Frequent délestage allows the tannins necessary for the longevity and structure of the wine to be extracted from the skins and seeds.
Ageing	Aged for at least three years, including two in large oak barrels and one in the bottle.
