||White sparkling classic method brut
||20% Chardonnay, 80% Pinot Nero
||The altitude of the vineyards has an average above 400 meters in the authorized areas of the Alta Langa docg.
||The grapes are selected on the sorting table and the whole clusters are chilled before undergoing soft pressing in an inert environment.
||Fermentation is exclusively in temperature-controlled steel tanks. The wines obtained from this process remain in contact with their own yeasts and are subjected to periodic bâtonnage until the tirage and second fermentation.
||This process takes place in the historic underground cellars in the absence of light and at controlled temperatures for the time required by the vintage with an average of 42 months. The dégorgement à la glace ends with the dosage of the Liqueur d’expedition. For this Brut that is 6-7 gr/L of residual sugar. In the Liqueur d’expedition to preserve the terroir-wine link, no distilled wines (such as Cognac or Brandy) are ever used at Enrico Serafino.
