Harvest |
By hand, with crates. Grapes are sorted after heavy cluster thinning in the summer. |
Vinification |
The Teroldego grapes are immediately cooled to 16°C in the cell, then destemmed softly and partially crushed, and then fermented with temperature control at about 12°C in special Ganimede winemakers, capable of guaranteeing excellent wetting of the marc, hence excellent extraction, without causing damage to the skins. The grapes at Podere Maremmello are vinified on site, respecting the varietal characteristics and their typicality. |
