Harvest By hand, at perfect ripeness in mid-September.

Fermentation period More than 10 days.
Vinification Soft pressing of the grapes. The first must ferments for more than 10 days at 16°C.
Ageing In stainless steel for more than 2 months in contact with its yeasts. After bottling, it spends a month in a temperature-controlled cellar in the bottle to develop its bouquet.
