Harvest |
By hand, in the morning when grapes are perfectly ripe, during the first fortnight in September. |
Vinification |
From the grapes, which are further selected during the harvest, about 55% of the first must is obtained, which ferments slowly in small new oak barrels for about 40 days. |
Ageing |
At least 3 months in the bottle at a controlled temperature. The wine ages on the yeasts until spring at a controlled temperature. |
Pairing |
It accompanies good fish dishes, noble shellfish and tasty white meats. |
