Vinification The grapes, once transported to the cellar, are softly pressed into round grains. The must obtained is cold decanted for 24 hours. Fermentation takes place in steel casks at a controlled temperature that remains constant between 18 and 20 °C.
Ageing On its own yeasts for 6 months during which frequent "battonage" is carried out.
Allergens Contains sulphites
Pairing It goes well with risotto and substantial first fruits and processed food. Particularly suitable to accompany seafood and shellfish.
