Vinification |
The grapes are harvested entirely by hand, when perfectly ripe and in the cooler hours of the morning. In the cellar, the whole grapes are softly pressed. After an initial racking, the first must is placed in temperature-controlled fermentation tanks. |
Ageing |
The wine then remains on its fine lees for at least 8 months and is then bottled. |
