Vinification |
The grapes are harvested entirely by hand, when perfectly ripe and in the cooler hours of the morning. Soft pressing of the whole grapes takes place in the cellar. After an initial racking, the first must is placed in temperature-controlled fermentation tanks. |
Ageing |
On its fine lees for at least 8 months before being bottled. |
