||In new barrels (61%): Allier oak. Aged on lees until bottling. Blending with compressed air and gravity. Natural settling and degassing (1 month in stainless steel vats at 16°C). No filtration.
||A wine of character, dishes of character: hare roe with reinettes, partridge with grapes or roasted venison, unless you serve venison as a steak! Of course a nice piece of wild boar will be perfect.
