||September 9th. Selection in the vineyard and on arival in the winery.
||75% of whole grapes. Not crushed and vatted by gravitaty. No yeast addition. Maceration: pre-fermentation, cold (12-15°C) for 5 days. Length of maceration: 17 days. Cap-punched once a day until mid-fermentation and a light pumping-over until the end of vatting time.
||14 months in oak barrels. Percentage of new barrels: 40% Toasting: long and slow. Source of wood: forest of Citeaux, Tronçais Light and soft filtration. No fining.
||It goes well with roasted and braised red meats, but also with simple beef steaks or grilled pork chops.
