De Stefani Prosecco Col Fondo 2019
This Prosecco 'Col Fondo' is Prosecco's most original and traditional version. It is vinified without added sulphites, becomes sparkling through natural fermentation in the bottle, and is presented as 'Col Fondo', i.e. with the sediment represented by the wine's natural yeasts, which give it fragrant hints of bread crust. When served, the wine can be decanted to separate the yeasts and appreciate its clarity, or it can be served with them to better appreciate its aromatic characteristics.

Vinification After harvesting, grapes are immediately brought to the wine factory. Destemming and crashing of the grapes, cold skin contact, soft pressing, cool static clarification and fermentation at a controlled temperature. Then the wine matures in these containers for several months on its yeasts, which are periodically suspended through frequent bâtonnage to enhance the wine's organoleptic depth and harmony.
Ageing The wine then undergoes the second fermentation with natural fermentation in the bottle and the sediment, represented by the yeasts, is left in the bottle to organoleptically enrich the wine.
