||Before crushing they were carefully selected to assure the quality of the wine. The fermentation took place in stainless steel tanks under strict temperature control between 26°-28°C. Once the fermentation was complete the wine was kept in the tanks for another month for maceration, after after this time 40% of the wine was kept in French oak barrels.
