||Coyam is made from a careful selection of grapes from our own vineyards in the Maipo and Colchagua valleys
||The grapes are harvested by hand and transported to the winery in small 10-12 kg crates.
||This is followed by a further manual selection of the healthiest and best quality grapes, which are then vinified in the winery equipped with a gravity-fall system. Vinification begins with maceration at 8-10 °C for 4-5 days, followed by alcoholic fermentation at 28-30 °C in steel tanks and malolactic fermentation in French oak barriques.
||In French (75%) and American (25%) oak barriques for 12 months.
||Ideal with red meats, game and mature cheeses.
