Vinification |
Destemming and maceration with skin contact at a controlled temperature of 26-28°C for about 25-30 days. Fermentation at a controlled temperature, of 26-28°C with constant pumping-over and punch-down. Malolactic fermentation is carried out in 225-litre French oak barrels. |
Ageing |
14-16 months in medium to highly toasted French oak barriques (60% new). Subsequently 18 months of refinement in bottles. |
Pairing |
Game, meatloaf, pork loin baked, and aged hard cheese. |
