Vinification |
Soft pressing of the grapes, fermentation in stainless steel tanks at a controlled temperature of 16°C. The base wines are produced separately according to the vineyard of origin and then skilfully assembled to create the cuvée. |
Ageing |
In the bottle on the lees for about 40 months in the company's cellars at a constant temperature of 12-15°C. |
Pairing |
Ideal as an apéritif and for the whole meal. It perfectly pairs with seafood, raw fish, light red meat, cured meats, main courses or second courses with tomato sauce. It is also great with pizza and aged cheeses. |
