Vinification |
Once the grapes have been crushed and destemmed, they are softly pressed without oxygen and left to macerate at a cold temperature of about 14°C overnight. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, and the wine remains in contact with its yeasts and fine lees for about two months. |
Ageing |
The wine is bottled and aged in the bottle before being marketed. |
Pairing |
Excellent with starters of fish from the lake and sea, delicate first courses with vegetables and fish-based main courses. |
