Harvest	Between late August and early September. The grapes are harvested and placed in boxes with exclusively manual selection.
Vinification	The winery's vineyard area covers approximately 20 hectares divided into small plots. The Pinot Nero plots are harvested and vinified separately. The grapes are destemmed but not crushed to keep the berries whole. Cold pre-fermentation maceration is followed by fermentation in temperature-controlled stainless steel tanks. Brief daily pumping over. Once fermentation is complete, racking and malolactic fermentation in barriques follow.
Ageing	After about 12 months in barriques, only the best plots are selected and blended. Bottling is followed by further ageing in the bottle for about 1 year.
