Harvest |
The grapes are harvested and placed in baskets exclusively by a manual selection around the end of August/beginning of September. |
Vinification |
After the soft pressing of the whole bunches, not destemmed, the must is left to decant in temperature-controlled steel tanks. After a few days, it is racked and divided between terracotta amphorae and French oak barriques, where alcoholic fermentation takes place and lasts about 4 weeks. Malolactic fermentation is only partially carried out. |
Ageing |
About 12 months on the lees between amphorae and barriques, during which bâtonnages are performed. After bottling, the wine rests in the bottle for about 6 months before being marketed. |
