||White sparkling charmat method sweet aromatic
||In the winery the Moscato grapes are cooled down before crushing and only the free fall juice is being collected. Followed by a first fermentation in steel tank for approximately 2 months, reaching 5,5,% alcohol. The fermentation is stopped by a drastic chill down, followed by a filtration before the tirage.
||Long second fermentation in bottle of 4-5 months done in a special cool cell, until the Moscato reaches and alcohol leve of 7.0%. Quick chill down to minus 2 degree Celsius in order to stop the fermentation. Total aging for 4 years on the lees in bottle at minus 2 degree Celsius.
||Ideal for desserts, strong cheeses, foie gras.
