Harvest The grapes are harvested by hand.
Vinification After a short maceration, the de-stemmed grapes are softly pressed; the juice undergoes the alcoholic fermentation at the temperature of 17 °C. After the fermentation, the wine ages on the fine lees for a few months; in spring the cuvée is prepared, added with the liqueur de tirage and bottled.
Ageing After a bottle fermentation of 18-24 months the wine is disgorged and added with liqueur d’expedition. All procedures are carried out in conformance with regulations laid down by the official control commission.
