Collalto Prosecco Valdobbiadene Superiore Brut
This Prosecco represents the most 'pure' version, meaning for it the one more anchored to the territory of origin and its expressive peculiarities, and the most natural interpretation of the characteristics of the specific Glera vine. Faithful therefore to the varietal impact of the prevailing vine, to the sight it presents a beautiful straw yellow color with light greenish reflections, demonstrating its great freshness and youth. The perlage is persistent, elegantly minute and regular and explodes in a thick and nervous, bewitching foam. On the nose its characteristics of freshness and fragrance are substantiated in recognitions of freshly ripe Golden apple and Williams pear, lying on an extremely delicate and pleasant floral background. On the palate its acidity rightly dominates, without ever overpowering it, on the other gustatory sensations, conducting the rhythms and the cadences of the tasting. The sugary impact blends well with the sour note and turns into a persistence and complexity absolutely worthy of note. The retronasal return fully brings back the taste sensations tested during the tasting.

Pairing

Excellent as an aperitif when drunk alone, it goes well with warm appetizers of seafood, delicate fried fish from the Adriatic, vegetable tempura, soups, soups and risotto with vegetables. To be tried also with white meat dishes, with a delicate and light sauce, whose sapid and oily bottom is balanced by the acidic action on the palate.
