Colour

The colour is dark garnet with bluish highlights.

Bouquet

The nose presents intense aromas of black fruits such as blackberries and blackcurrants, then of scrubland herbs, notably with rosemary and wild immortal.

Flavour

In the mouth, the attack is round and supple. The tannins are very fine and give an interesting bite.

Harvest	The grapes are harvested by hand with a double sorting: at the plot and at the reception. The grapes are de-stemmed and then vatted and kept cold for 3 to 5 days.
Fermentation temperature	22-24°C
Vinification	Fermentation is carried out with indigenous yeast and thermoregulated at medium temperature (22-24°C). The vinification is classic with daily pumping over and punching of the cap and a vatting period of 25 to 30 days.
Ageing	Malolactic fermentation is carried out before blending. Aged for 24 months on fine lees in concrete tanks.
