Vinification Fermentation occurs in 50-hl and 75-hl concrete tanks at a controlled temperature between 26°-30°C for about two weeks, followed by a short maceration on the skins for 10 days. Malolactic fermentation takes place in concrete vats.
Ageing In barriques for a variable period. Aged in bottles for a variable time.
