Much more than a rosé, our Tavel is a “grand vin”. Its deep aromatic complexity and its very special balance are the hallmarks of a great wine.

Flavour

Wonderful generous mouthfeel and the diversity of fruit aromas combine with a structure that defines the balance of this wine. In the finish we find the very first notes of spices.

Fermentation period 15 days.
Vinification The grapes are meticuloussly de-stemmed and chilled to capture and retain all the fruit freshness and vigour of their aromas. THey are lightly crushed to burst the berries and prepare them for maceration on the skin for approximately 24 hours. The varieties are blended two by two toenhance aromatic complexity. Once the ideal colour has been obtained, the entire tank is bled; the must is pressed using gentle pneumatic pressuring and is then added back to the free-run juice.
Ageing The wines are the racked to spend a few months in tank prior to the ultimate blending stage and bottling.
