Harvest After harvesting, the grape buches are de-stemmed and gently crushed prior to a period of over 3 weeks of tank fermentation.
Vinification Each grape variety is vinified seprately at peak ripeness.
Ageing After the must is pressed, juices are blended and the wines embark upon their maturation period. Thirty percent of the wines are raised in French oak barrels, one-fourth of which is replaced every 4 years. Our wines barrel mature for 6 to 10 months dependig on the village and on aeach wine's potential.
