	Perlage Fine and persistent.
	Colour Straw yellow tending to greenish.
	Bouquet Sensations of apple, medlar followed by warmer ones of almond, walnut and fresh resin.
	Flavour The taste is mineral and very fresh, with notes of cedar and flint on the palate. An exceptional roundness and sensations ranging from white figs to coffee powder prevail.

Pairing

Recommended for the whole meal, perfect with ham or with the Saint-Marcel Jambon de Bosses, try it with a slice of bluefin tuna.
