Climate |
The grapes come from vineyards located in the municipalities of Quart, Saint-Christophe, Aosta, Sarre, Villeneuve, Saint-Pierre, Charvensod Aymavilles, Jovençan, Gressan, on the right and left of the Dora Baltea. The vineyards are located between 600 and 800 m. a.s.l. |
Harvest |
The harvest is staggered over twelve-fifteen days in reference to the different altitudes and exposures of the vineyards. |
Vinification |
The Torrette ferments and rests for about 6 months in steel. The bottlings start from the late spring following the harvest. In order to enhance the spicy characteristics, it is customary during the pre-bottling phases to make small cuts (5/10%) with lots of the same wooden turrets. Malolactic: complete. |

Typical delicatessen, white and red meats, local cheeses of medium maturity (Toma and Fontina). |
