Cavalleri Franciacorta Blanc de Blancs Brut
The Blanc de Blancs constitutes, in quantitative terms, two-thirds of the winery's Franciacorta production. For this reason, although one might think that the attention of us producers is mainly dedicated to the production of the super vintage reserves, a large part of the winery's efforts is actually aimed at guaranteeing this vintage-free cuvée the Cavalleri personality and 'drinkability' in addition to an excellent and consistent level of quality. After the healthy biodynamic breeze has been blowing over our vineyards for a few years now, the company has decided to introduce a 15% fermentation with indigenous yeasts into the basic Blanc de Blancs wines. Small steps, consistent and gradual, on our path towards the Franciacorta par excellence, within which the finesse and elegance of the chardonnay of Erbusco, only from the hills, surprisingly increase over time.

Harvest The majority of grapes come from the last harvest. About 30% comes from previous vintages, specially stored at controlled temperatures.
Vinification The whole Chardonnay grapes come 85% from the 2016 vintage and 15% from 2014 reserve wines. Fermentation occurs 85% in stainless steel and 15% in large oak barrels. 15% of the cuvée underwent first fermentation with indigenous yeasts.
Ageing At least 24 months. Manual riddling for 4 weeks.
