The Coltassala wine has an intense ruby red colour. The nose is elegant and intense, with notes of vanilla, cocoa and fruit in alcohol. It is a wine of great structure destined for long ageing.

It displays elegant aromas of violet and iris, cherry, strawberry tree, citrus and spicy spice tones, mentholated tobacco and resin.

Flavour

Complex, vibrant in freshness, distinct in its noble and well-extracted phenolic mass. It is a wine with great persistence.

Harvest The grapes were all harvested by hand and collected in 15-20 kg boxes.
Vinification The grapes are destemmed and softly crushed. Fermentation took place using indigenous yeasts. The crushed grapes were fermented in stainless steel tanks at a controlled temperature of between 27 °C and 30°C. During the first fermentation phase, which lasted 14 days, two rounds of punching-down per day were carried out to have a greater extraction of 'noble' substances from the grapes. After maceration on the skins for a further 10 days, malolactic fermentation was carried out.
