Origin |
Radda in Chianti (Siena). |
Climate |
The climate of Radda is characterized by thermal solid excursions and never excessive maximum temperatures, thus favouring the elegance of the wines. The company's vineyards are located about 400 m. a.s.l. and enjoy Southeast, South, and Southwest exposures. |
Soil composition |
Clayey-limestone with a good presence of silica skeleton. |
Harvest |
By hand. The grapes are then sorted once they arrive at the winery. |
Vinification |
Fermentation occurs in stainless steel thermo-conditioned 50 hl and 100 hl vats, followed by maceration on the skins for 2 or 3 weeks. The malolactic fermentation is carried out both in stainless steel and wood. |
Ageing |
Part in tonneaux and part in Slavonian 20 hl oak barrels. Final ageing in bottle for at least 6 months before marketing. |
Pairing |
It pairs well with red and white meats, such as the traditional cacciatora rabbit, roast guinea fowl with herbs or Tuscan-style beef stew. It also pairs well with game dishes, such as stew venison. |
