||Grapes were harvested by hand from the Mormoreto vineyard in 15 kg crates. After an initial sorting of the clusters on the vine, they were selected again upon their arrival in the cellar. This attention to detail ensures the greatest possible quality.
||Alcoholic fermentation took place at controlled temperatures and lasted for ten days. Maceration was defined based on tasting, and was finished after a period of one month. After racking, the wine was completed, bringing the malolactic fermentation process to a close.
||In French oak barriques, where it remained for the next two years, until it was bottled. The subsequent months in the bottle enabled Mormoreto to become refined, expressing its maximum elegance and potential.
