Marchesi Antinori Castello della Sala Cervaro della Sala Magnum 2022
The name Cervaro derives from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small portion of Grechetto to give a wine designed to age over time represent a unique place's elegance and complexity. Cervaro della Sala was one of the first Italian wines to undergo malolactic fermentation and barrique ageing with its first vintage in 1985.

Bouquet

Notes of chamomile and flint.

Flavour

On the palate, it is savoury, with the characteristic delicate aromas of vanilla and butter that elegantly combine with hints of exotic fruit to compose a well-defined bouquet. It is still a young wine that will evolve in the years to come.

Harvest In the very first hours of the morning to keep grapes healthy.
Vinification The must resulting from skin maceration of the grapes at 10°C for about four hours is transferred by gravity to decantation tanks where it clarifies before being poured into barriques. It is here that alcoholic fermentation takes place, followed by malolactic fermentation.
Ageing Usually after five months, the Chardonnay is ready to be transferred back into steel to blend with the Grechetto, which instead is vinified separately and without wood. After bottling, the Cervaro della Salarimane ages in the bottle for a few months in the historic company's cellars.
