||50% Chardonnay, 50% Pinot Nero
||The pressing is soft to extract only the must. Every precaution is put in place in order to obtain uncompromising quality.
||The Pinot Noir, after the first fermentation, ages for about 8 months in temperature-controlled steel tanks. Subsequently it is mixed with Chardonnay which has fermented in small oak barrels for about 8 months. This Cuvée, after the refermentation, matures for over 50 months before disgorgement and then refines further in the bottle to achieve the perfect balance.
||It is recommended to be eaten throughout the meal with fish and shellfish crudités or with Norwegian stockfish. Excellent with the carpaccio of sarago or with a scampi risotto. Aphrodisiac with oysters.
