||Fermentation of must at controlled temperature. The processing of this wine takes place according to the classic method of bottle fermentation. For the quiet base wine, obtained with Chardonnay and Pinot Noir grapes, sugar and yeast selected are added. The wine, then bottled, begins a second fermentation, followed by rest on the yeast which lasts at least 18 months, and then the boiling, dosing and final capping.
