Harvest	First week of October. The Lambrusco di Sorbara D.O.C. “Rimosso” is obtained from a selection of the best Sorbara grapes entirely picked by hand.
Vinification	Maceration takes place in a refrigerated press. Alcoholic fermentation is carried out in stainless steel tanks at a controlled temperature.
Ageing	After waiting at least 6 months to allow the wine to clarify, the wine is bottled. The bottles remain at a constant temperature of 12°C, which allows the wine to ferment and age on its yeasts.
Total acidity	8.10 gr/L
Residual sugars	0.30 gr/L
Allergens	Contains sulphites
