||Red sparkling charmat method dry
||100% Lambrusco di Sorbara
||First week of October. The Lambrusco di Sorbara D.O.C. “Rimosso” is obtained from a selection of the best Sorbara grapes entirely gathered in small cases (17 kg. max) by manual harvesting.
||Maceration takes place in refrigerated press. Alcoholic fermentation is done in stainless steel tanks under controlled temperature.
||After resting at least six months, in order to improve the limpidity, the wine is ready to be bottled. Bottles are stored in a constant ambient temperature of 12°C, which allows the wine to mature in the presence of its natural yeasts.
