Harvest |
Done manually in the most optimal time period for each of the three grape varietals used (between beginning and mid September) and with a careful selection of the grapes done directly in the vineyard. |
Vinification |
The alcoholic fermentation takes place in steel tanks at a controlled temperature for about 2 weeks. |
Ageing |
12 months in three different kind of cask: barrique, tonneau and big Italian barrel. Finally it ages for other 4 moths in bottle. |
Pairing |
Local dishes including wild boar “alla castagnetana”, game in general, chopped chanterelles, and also grilled red meat and hard cheeses. |
