Harvest	By hand, with small 12 kg crates. The grapes were placed intact in the press and underwent a soft pressing.
Fermentation temperature	12-14 °C
Fermentation period	2 weeks.
Vinification	The obtained must was transferred to stainless steel and underwent alcoholic fermentation at a controlled temperature of 12-14°C for a fortnight.
Ageing	On the lees for a few months before bottling, which takes place in the spring following the harvest.
Allergens	Contains sulphites
Pairing	Ideal with fish dishes, shellfish and delicate white meats. Excellent as an apéritif.
