Perlage

Fine perlage.

Colour

Pale pink, clear, clean.

Bouquet

Aromas of flowers and small red fruits strawberry, blackberry, bread crust medium intense, pleasant.

Flavour

Medium-bodied, round, not overly charged, on the palate there is bread crust, yeast, berry, small red fruits, currant, strawberry, grapefruit and tangerine. Quite persistent. Tannins present, of just the right intensity. Balanced.

Pairing

Wine for the whole meal, for mainly fish dishes, even raw, coquillage . White meats with light cooking. Fried. Quality sliced meats and cold cuts. Delicious aperitifs. Fresh cheeses that are not too acidic. Goat's milk or medium mature cheeses with medium-bodied artisan jams (apricot or peach) or honey.

Harvest Technically ripe, early compared to the ripening of the grapes intended for red. Harvested by hand, selection of the bunches one by one. Period: end of August.
Production technique Autumn pruning, then spring topping as required, no herbicides and respect for the crop with limited entry of machinery and treatments.
Vinification Preparation of the sparkling wine base in steel vats. Drawing with addition of liqueur (yeast) over the next 6 months.
Ageing 24 months in bottle, on the lees in the estate's own cellars at controlled natural temperature. Slight natural excursion due to the completely underground location of the cellar. After ageing, the wine is disgorged and, after addition of the liqueur, bottled for final consumption.
